Each morning our Chef prepares breakfast dishes using fresh ingredients and a rotating menu that is sure to wake you up and excite your taste buds. Nestled in beautiful Fair Haven, Vermont we are about 45 minutes away from major ski resorts. Right around the corner from The Marble Mansion Inn is the beautiful campus of Castleton University. Additionally we are surrounded by Vermont’s natural beauty and the green mountains. Lake Bomoseen is just a short drive away and features fishing, boating, kayaking and camping. It is one of the local favorite vacation spots during the summer.

Beautiful warm summer morning with a projected high of 81 today. First guests came to breakfast at 8:00 am sharp to enjoy a hot egg dish with thick maple bacon & pecan cinnamon glazed scones. Seven guests arrived at 9 am to enjoy puffed french toast topped with walnuts, pecans & pure Vermont maple syrup. The first half of the recipe is prepared the evening before with french bread in an egg wash made from eggs, milk, cinnamon, nutmeg, mace & vanilla to soak overnight. Bake the first half for 20 minutes in the morning then topped with brown sugar, nuts and maple syrup to bake 20 more minutes. Our Chef use to make the puffed french toast a lot but it is very sweet.
Warmer temperatures continue with today's high forecasted to be 82. Early morning for the Chef to start breakfast preparation at 6:30 am. Two more guests at breakfast than what was expected. Five egg dishes prepared and the batter for the mauna loa muffins. Chelsea took care of putting together three pans of bacon. First guests came to breakfast at 8 am, then 9 and 9:30. Two rooms of guests have checked out and one room arrives today. There seems to be a nice breeze today.
